Establishment of regional and organic cultivation and processing chains for Einkorn and Emmer wheat
Objective of the Operational Group was to make the old wheat species einkorn Triticum monoccocum and emmer Triticum diccocum marketable again and to increase the area of cultivation. In the long term, it is intended to cover the increased demand for old types of wheat from local cultivation and to contribute to maintain the diversity of cultivated plants.Thereby a regional and sustainable value chain from cultivation to processing should be created for the old wheat species and experiences gained. The project contributes to maintain the diversity of cultivated plants.The project phases were divided into cultivation, processing of the raw material as well as grinding and baking studies for the production of new, innovative products from emmer and einkorn.
The production of the spelled grains has proven to be suitable at all four practice locations (loess, loess-loam, sandstone weathering) in Thuringia. It turned out that the species (emmer and einkorn) are very resistant and an acceptable to very good yield is possible. Using the example of bread and baked goods, several closed, partly regional value chains could be established. Constant coordination between the actors (e.g. requirements, cultivation contracts, sales plan ...), a stronger focus on marketing and the investigation of new varieties in research and practical cultivation are important building blocks for a long-term value chain.
